Summer Beauty Salad: Spinach + Strawberry + Mango


Salad doesn't have to be boring. When you start with a good base (anything dark green: spinach, arugula, kale, mesclun, mache, swiss chard, etc) you can create any flavor profile your heart desires with some creative toppings.

Since I'm pumped for spring and summer, I've been loving adding fruit to my typically more savory salads, like with my Tropical Spinach Salad.

Thanks to some unseasonably warm temperatures this winter/spring/proof of global warming season, strawberries are ready early this year! Unfortunate for the polar bears, but a welcome respite from the gray days we've been having recently.

Ingredients
3-4 cups baby spinach
5 strawberries, sliced
1/2 cup mango, cubed
1/4 cup red onion, chopped
2 tbs. pumpkin seeds
3 tbs. hemp seeds

Dressing
2 tsp. extra virgin olive oil
2 tsp. fresh squeezed lime juice
salt, to taste
crushed red pepper flakes, to taste

Salads are simple: Throw all the ingredients in a bowl, top with dressing, and voilà!
