Arugula & Fig Salad with Balsamic Vinaigrette


Everyone knows dressing can make or break a salad. It can determine whether you're scraping the bowl or leaving greens on your plate, so it's good to have a few simple and tasty dressing recipes under your belt. 

This balsamic vinegar dressing has a little kick thanks to a drop of mustard, and it will likely have you going back for more.  It's perfect for pairing with peppery arugula and sweet fig, which I did here, but by all means experiment with other lettuce and toppings. 

Arugula and Fig Salad with Balsamic Vinegar Dressing
Prep Time: 5 minutes
Serving:

Salad
3 cups arugula
4 fresh figs, quartered
1 tbs pumpkin seeds

Dressing*
2 tsp extra virgin olive oil
1 tsp balsamic vinegar
1/4 tsp mustard
salt and pepper to taste 

*Note this recipe is enough to just coat the salad. If you like more dressing, add an extra teaspoon of olive oil. 

Put arugula in a bowl, and top with pumpkin seeds and fig. 

In a separate bowl, whisk together all dressing ingredients with a fork.

Pour dressing over salad and mix well.
