A Coconut a Day....

Coconut is one of the most healthy foods. Check out this post on what coconut can do for you.

Here are 3 ways to get your daily coconut dose:

Coconut Oil
Coconut Oil is most readily available, and is the easiest way to ensure you get all of these amazing healing and restorative properties everyday.  It can also be used topically as a moisturizer, hair conditioner for extremely dry hair, and to heal pimples/small cuts without infection.   Make sure to always purchase unrefined and expeller pressed versions.  I use it every single day, on top of toast, in smoothies, in dessert recipes, or to grease the pan for eggs or vegetables.  Victoria Secret Supermodel Miranda Kerr says she puts a spoonful in her green tea everyday!

Try Spectrum Expeller Pressed Unrefined Coconut Oil, available at Whole Foods

Coconut Water
While there are tons of coconut water brands on the market now, most are pasteurized and therefore can't compete with the flavor and nutrition profile of fresh water straight out of the coconut.  Some Whole Foods, as well as health food markets and Asian specialty shops sell the young green coconuts with their green skin and top cut off, perfect for inserting a straw.  See picture below.  If fresh young coconuts aren't available (there is almost no water in the mature brown coconuts,  so skip those if you are looking for coconut water), some stores carry frozen raw coconut water.  That is the second best option.  Otherwise, you should wait for your next tropical vacation to indulge in the water of a coconut straight from the tree!

Coconut Meat
Coconut meat comes from the inside of young coconuts.  It is quite a treat.  Instead of inserting a straw into the coconut, you can turn it upside down and empty it into a glass.  You can then insert a spoon to scoop out the smooth, soft, white meat inside and either put it in your drink, or eat it right off the spoon.  Either way, it is a delicious treat!
