If just the thought of kale scares you, read on. As much as I love it now, I know it can be intimidating. If you've never had it before, sautéing it is probably a good first foray into it. Try this quick, effortless, and scrumptious recipe, and you'll likely find yourself going back for seconds.
Quick and Scrumptious Kale
Ingredients
2 tbs. Coconut Oil (or Extra Virgin First Cold Pressed Olive Oil)
1/4 of a Yellow Onion, chopped
1 Bunch of Kale, center ribs and touch stems discarded, leaves cut into 1-inch-wide strips
Sprinkle of Hot Pepper Flakes
Pink Himalayan Salt
Instructions
1. In a sauté pan, heat the coconut oil over a low to medium heat.
2. When hot enough, toss in the yellow onion, and let cook until translucent, but not brown, about 2-3 minutes.
3. Add the kale to the pan, and cover, but watch closely and stir every minute or so.
4. When the kale is wilted enough to your liking (I keep it in for appx. 5 minutes), stir in a sprinkle of hot pepper and salt to taste.
5. Serve & Enjoy!
