Caramelized Onion, Mushroom, & Kalamata Olive Frittata

Caramelized Onion, Mushroom, Kalamata Olive Frittata
Brunch for 12? No problem. Whipping up a fritatta seems complicated, but is actually very easy.

Frittata for 12
20 minutes prep// 60 minutes bake // Yields: 12 servings

Ingredients
White Onion (2, sliced thin)
White Button Mushrooms (3 cups, sliced thin)
Eggs (20)
Kalamata Olives (3/4 cup, pitted and sliced)
Gruyere or vegan cheese (1 1/2 cups, shredded)
Coconut Oil or Olive Oil for pan

Instructions
1- Preheat oven to 400 degrees.
2- In a large skillet heat oil on medium-low heat and add the onions. Cook, stirring occasionally until they begin to caramelize, about 15 minutes.  
3- Add in sliced mushrooms, and stir occasionally until they are soft, about another 5 minutes.
4- Meanwhile, while that's cooking, crack the eggs in a bowl and whisk with a fork.
5. Pour the eggs into a large glass baking dish.
6. Add in olives, cheese, and mushroom and onion mixture when ready.
7. Season with salt and pepper, and stir well to evenly distribute all ingredients.
8. Bake for 1 hour, or until a knife comes out clean.
9. Serve!
