Raw Ice Cream: Strawberry Mint
Raw Vegan Ice Cream. Four words you probably never thought you'd see in the same sentence. Lucky for you, your eyes aren't deceiving you.

Check out this super simple yet super satisfying alternative to dairy ice cream.

I made two versions: the first with a nut base, the second with just a fruit base. While the first is more photogenic with a creamier consistency like regular ice cream (see first picture), I personally prefer the all fruit variety. It really lets the fresh flavor of the berries through. 

Oh, and the best part? No need for extra sweeteners, the banana does the job.

The second best part? It's ready instantaneously, no need for an ice cream maker. Score! 

Oh, and one more thing, remember to ALWAYS use organic berries

Strawberry Mint Raw Vegan Ice Cream 
5 minutes to make // Yields: 6-8 servings

Ingredients

Water (1/4 cup)
Raw Cashews (one cup, soaked in water at least 4 hours)
Banana (one, frozen*)
Strawberries (3 cups, frozen)
Mint (10-12 big leaves)
Strawberries (1/2 cup, fresh, for garnish, optional)

Instructions

1- Place water, drained cashews, banana, strawberries and mint in a Vitamix or high speed blender.
2- Process on high for about a minute.
3- Spoon ice cream into serving bowls.
4- Garnish with fresh strawberries.
5- Serve and enjoy.

Strawberry Mint Raw Vegan Ice Cream (Soft Serve) 
5 minutes to make // Yields: 2 servings

Yum! Look at all the green mint flecks and red strawberry sparkles! The picture isn't as pretty, but trust me this is so good. 


Ingredients

Water (1/4 cup)
Banana (one, frozen*)
Strawberries (1 1/2 cups, fresh or frozen)
Mint (5-6 big leaves)
Strawberries (1/2 cup, fresh, for topping)

Instructions

1- Place all ingredients, except additional strawberries for topping in a Vitamix or high speed blender.


2- Process on high for about a minute.
3- Meanwhile, chop fresh strawberries into small pieces for topping. 
3- Spoon ice cream into serving bowls.
4- Top with chopped strawberries.
5- Serve and enjoy.
