Mango Guacamole

This delicious tropical take on guacamole is loaded with anti-oxidants and good for you ingredients. Pair with veggies or pita chips, or just eat straight from the bowl!


Ingredients 
Fresh Mango (one, chopped) 
Fresh Pineapple (1 cup, chopped)
Jalapeno or serrano chile pepper (one, de-seeded and minced) 
Grape Tomatoes (handful, chopped)
Red Onion (2 tbs, chopped)
Avocado (three) 
Cilantro (a few sprigs)  
Fresh Lime (one, juice only)
Pink Sea Salt (to taste) 



Instructions
1 - Put mango, pineapple, pepper, tomato, onion, avocado, and cilantro (leaves only) in a mortar bowl.*
Anti-oxidant packed ingredients, pre-crushing into Mango Guacamole
2 - Use the pestle to mash all the ingredients together, slowly pouring in lime juice to incorporate.

3 - Salt to taste.

4 - Enjoy!

*If you don't have a mortar and pestle, you can also process the ingredients in a food processor.
