Blueberry Ice Cream: Vegan and Raw

Raw vegan ice cream: decadent, satisfying, and guilt-free!

This super simple soft-serve is perfect for summer nights, or as a sweet followup to a weekend brunch.


Blueberry Raw Vegan Ice Cream 
5 minutes to make // Yields: 2 servings

Ingredients

Water (1/4 cup)
Banana (one, frozen*)
Blueberries (1 cup, organic) 
.

Instructions

1- Place water, banana, and blueberries in a Vitamix** or high speed blender.
2- Process on high for about a minute.
3- Serve and enjoy.


*Peel an overripe banana, put in a ziploc bag, and freeze overnight. Can be frozen for up to two months.
