Raw Chocolate Almond Butter Ice Cream


June 7th is officially Chocolate Ice Cream Day...an obscure holiday, yes, but a deliciously decadent one that absolutely MUST be celebrated. 

Skip the dairy and soy and try this easy fruit based ice cream. You'll never reach for a Haagen-Dazs container again.



Chocolate Almond Butter Ice Cream
2 minutes to make // Yields: 4 servings

Ingredients

Banana (2, frozen*)
Raw Cacao (2 tablespoons)
Raw Crunchy Almond Butter (2 tablespoons) 
Coconut Oil (1 tablespoon, unrefined)
Raw Cacao Nibs

Instructions

1- Pour all ingredient except cacao nibs into a Vitamix.**
2- Process until well combined, about one minute.
3- Pour into a bowl (it will be like soft serve ice cream), and top with cacao nibs.
4- Enjoy!

You can put extra in a container and freeze to indulge in later, just let it sit out for a few minutes to soften again.


*Instead of throwing out overripe bananas, peel them, put in a 
ziploc bag, and throw in the freezer, at least overnight. They are
the perfect base for ice cream and smoothies.

**If you don't have a Vitamix, a high speed blender will probably 
work, but it will take much longer. I don't recommend doing this 
in a regular blender, as there is not enough liquid and you can 
burn out the motor.
